Living a healthy life with corn moin-moin



Related Posts Plugin for WordPress, Blogger...Corn Moin-Moin is a delicacy that is prepared and enjoyed by people of different tribes. While some call it corn moin-moin, others refer to it as: Nni Oka; Igbankwu oka; Ekoki; Ukpo oka or Sapala or Abari depending on the tribe that is consuming it. Ololade Alabi writes on this special delicacy and the process of Maize   is a cereal plant that produces grains which can be cooked, roasted, fried, pounded or crushed to prepare various food items such as Egbo, Ogi, Tuwo, Gwate, Donkunu, Sapala and so on. In various parts of Nigeria among different ethnic groups, such as Yoruba, Hausa, Ibo, Ibira, Ishan, Yalas etc. Maize is also useful as medicines and as raw material for industries.

For instance, maize grains are prepared by boiling or roasting as (Eko) “agbado” and elekute in Nigeria and Kenke in Ghana, as popcorn which is eaten all over West Africa. Methods of preparing the delicacy are different from localities or ethnics groups.Today Xquisite Food focus is on Corn moin-moin, a healthy meal. It is quite filling but it is good for weight loss. This is a meal that you can add to your diets, simply substituting the palm oil for tomato stew. Here is the recipe:

– 5 pieces of fresh corn on cob or 500 grams corn meal (corn flour, not corn starch)
– 1 handful Crayfish
– 1 handful dry big prawns or dry fish
– 1 grilled fish
– 5 medium onion bulbs
– 2 cooking spoonful palm oil
– A handful chopped spinach or ugwu or scent leaves
– 2-3 stock cubes/ seasoning cubes
– Water
– Salt to taste
– Container of choice for steaming the moin-moin
Preparation – Before preparation of the meal:
-First, break off the prawn heads and tails, boil or soak the dry prawn in hot water to soften it a bit.

Tip
– Don’t throw away the prawn heads and tails.
– Slice the vegetables and set aside the vegetable.
– Now, blend the pepper, onions, prawn heads and tails and the crayfish.

To prepare corn moin moin using corn meal
– Pour the corn meal into a wide bowl, mix with water to get a thick batter like when making moin moin.
– Pour the blended mix into the corn meal batter, add the palm oil, vegetables, softened prawns, seasoning cubes and salt to taste then mix it well.
– Finally pour into your container of choice, seal and place in a steamer or pot of boiling water for 45 minutes to 1 hour.
– The corn moin moin is ready when it solidifies or hardens. Transfer to a tray. Leave to cool a bit. Serve and enjoy.
