Corn Moin-Moin is a delicacy that is prepared and enjoyed by people of different tribes. While some call it corn moin-moin, others refer to it as: Nni Oka; Igbankwu oka; Ekoki; Ukpo oka or Sapala or Abari depending on the tribe that is consuming it. Ololade Alabi writes on this special delicacy and the process of Maize is a cereal plant that produces grains which can be cooked, roasted, fried, pounded or crushed to prepare various food items such as Egbo, Ogi, Tuwo, Gwate, Donkunu, Sapala and so on. In various parts of Nigeria among different ethnic groups, such as Yoruba, Hausa, Ibo, Ibira, Ishan, Yalas etc. Maize is also useful as medicines and as raw material for industries.
