The suspect, believed to be in his 20s, sustained a fractured skull following the collision on Beal Lane in Shaw, Greater Manchester.
In the video, the suspected thief was seen running out of the shop and straight into the path of an oncoming car that hit him and threw him into the air.
A spokesman for Greater Manchester Police said: "The incident was a result of a suspected theft from a shop where the male ran onto the road and was hit by a vehicle. Officers are still investigating and enquiries are ongoing.
"The casualty's injuries are believed to be serious but not life threatening.
"He is believed to have sustained a fractured skull."
The collision happened shortly after 6pm on Wednesday, September 25, but the video was recently released. It's thought the man had fled the 'News, Food and Booze' newsagent.
